Ingredients

  • 2 New York strip steaks (24 to 28 ounces total)
  • 1 lb. of sweet Italian sausage without casing
  • 1.5 cups panko bread crumbs soaked in ½ cup of milk
  • ¾ cup of minced shallot
  • 2 eggs
  • ½ cup of flat leaf parsley
  • 1.5 cups of Monterey Jack Cheese (Coarsely grated)
  • Sprinkle liberally with kosher salt and freshly ground pepper
  • 6 strips of bacon

Instructions

  1. Grind the steak one steak at a time in a food processor and place ground beef in a large bowl.
  2. Add all the other ingredients
  3. Mix the ingredients with your hands until fairly homogenous
  4. Place the mixture into two separate loaf pans
  5. Add 3 strips of bacon to each loaf
  6. Bake at 350 degrees for 1 hour
  7. Let sit for 10 to 15 minutes before slicing
