Ingredients
Seared Beef
- 1 8 ounce filet mignon steak about 2 inches thick cut into 1 inch cubes
- Generous mix of kosher salt and pepper
Cucumber/Celery/Scallion Mélange
- ¼ cup cucumber that has been cut into ¼ inch cubes
- ¼ cup celery that has been cut into ¼ inch cubes
- ¼ cup green onion that has been cut into ¼ inch pieces
- 2 tablespoons olive oil
- 1 teaspoon red wine vinegar
- Generous mix of kosher salt and pepper
Instructions
Seared Beef
- Generous sprinkle of kosher salt and pepper
- Sear all for sides of the beef on a smoking hot pan for1 to 2 minutes a side
Cucumber/Celery/Scallion Mélange
- In a large bowl combine cucumber, celery and scallion. Add oil, vinegar, salt and pepper and stir together.
Canapes Assembly
- Place a piece of seared beef on a parmesan crisp.
- Add a spoonful of the Cucumber/Celery/Scallion Mélange
- Dress with a sprig of fresh dill
