Components in the Romaine Wedge with Gorgonzola vinaigrette, bacon, heirloom tomatoes, and homemade croutons
Ingredients
- • 3 cloves garlic, finely diced with 2 teaspoons Kosher Salt
- • 2 heaping tablespoons Dijon mustard
- • 2 tablespoons white wine vinegar
- • Juice of 1 lemon
- • 2 teaspoons honey
- • 1 cup extra virgin olive oil
- • 2 tablespoons Italian parsley, finely chopped
- • 1½ cups roughly grated Gorgonzola cheese (buy a block at Costco – better quality at half the price
Instructions
- In a large mixing bowl, add garlic, mustard, vinegar, lemon juice, and honey. Wisk together.
- Drizzle in the olive oil, whisking vigorously. Keep whisking until the vinaigrette is nicely emulsified.
- Whisk in the Italian parsley and Gorgonzola.
- Set aside or refrigerate.
