Ingredients
- • 3 cloves garlic, finely diced/mased with 2 teaspoons Kosher Salt
- • 1 heaping tablespoons Dijon mustard
- • 1.5 tablespoons white wine vinegar
- • 1 teaspoons honey
- • 1/2 cup extra virgin olive oil
- • 1 tablespoons Italian parsley, finely chopped
- • 2/3 cups roughly grated Gorgonzola cheese
Instructions
- In a large mixing bowl add garlic, mustard, vinegar, lemon juice and honey.
- Whisk together then drizzle in the olive oil, whisking vigorously. Keep whisking until the vinaigrette is nicely emulsified.
- Whisk in the Italian parsley and Gorgonzola. (Note: The Gorgonzola can be added at the last minute. You should ask if everyone likes Gorgonzola cheese as some people are allergic to it.)
- Set aside or refrigerate.
