Serve with:
• Thai sweet chili sauce (available in most super-markets)
o Note: I made three versions of this sauce with recipes I found online. When I tested them against two store-bought versions, the sweet chili sauce from the local supermarket won hands down. My recommendation is to go with the store bought!
Ingredients
- • 1 cup Italian style breadcrumbs
- • 1/4 cup milk
- • 1 pound chopped beef
- • 1 pound sweet Italian sausage, taken out of the casing
- • 1 ½ cups onion, finely chopped
- • 3 tablespoons garlic, finely minced
- • 1 cup Italian parsley
- • 1 cup Parmesan cheese, roughly grated
- • 2 eggs
- • Kosher salt and pepper to taste
- • 6 sticks of whole fat mozzarella string cheese, cut into ½-inch pieces
Instructions
- Preheat oven to 375°.
- Place the breadcrumbs in a small bowl and stir in milk. Set aside to allow the milk to absorb.
- In a large mixing bowl, place the chopped beef, sausage, onion, garlic, parsley, Parmesan cheese, breadcrumbs, eggs, salt and pepper.
- Roll up your sleeves, wash your hands, and then go to town mixing all of the ingredients. You want to have all the ingredients well blended.
- Wet one hand under in a bowl of water. Place a golf ball-sized spoonful of raw meatball (about 1.5 inches in diameter) in one hand. Push a half inch piece of mozzarella into the middle. Roll the meatball in your hand to round it out and cover the cheese with meat.
- Repeat the process until all the meatballs are formed.
- Place the meatballs on a baking sheet lined with aluminum foil and put it in the oven and cook at 375 degrees for 20 minutes until each is cooked through.
