Sometimes the things that challenge a layman are a simple solution for a real chef. For years, I struggled to grill sausages. Invariably, the heat of the grill would cause flare-ups with the fat in the sausages and result in burned exteriors and uncooked interiors. One day, I complained about this dilemma to Chef Lucien Vendome. Lucien gave me a “I thought you were smarter than that” look and said, “The solution is easy: mark the sausages on the grill, infusing them with the ‘Grill Flavor’ and then finish them in the oven.”
Ingredients
- • 1 pound sweet Italian sausages
- • 1 pound hot Italian sausages
Instructions
- Pre-heat your grill to get it very hot. Preheat oven to 400°.
- Grill the sausages until they are well marked but not burned.
- Place them on a cooking sheet and finish cooking in oven for 10 minutes or until they are cooked through.
