Ingredients
- 1.5 lbs. of squid (Cleaned, tubes cut into 2/5 inch rings and tentacles trimmed)
- 1 cup all purpose flour
- 1 teaspoon kosher salt
- 1 teaspoon black pepper
- 3 tablespoons corn flour
- 2 tablespoons cornstarch
- 1/2 cup sweet chili sauce
- 4 cups Peanut oil for frying
Instructions
- Preheat oil in a large pot heating to 350 degrees
- Clean and cut squid and them place between layers of paper towels and set in the refrigerator for an hour to dry
- Place flour, corn flour, corn starch, salt and pepper in a one gallon zip lock bag and shake to mix.
- Add the calamari into the bag with the flour mixture and shake to coat
- Place calamari in oil that has been brought up to 350 degrees and cook for 3 minutes or until golden brown. The key is to not overcook the calamari. The more you cook it, the tougher it gets.
