Ingredients
- 1 head cauliflower cut into 1 to 2 inch pieces (About 2 pounds)
- 2 tablespoons olive oil
- 2 tablespoons sesame oil
- 1 tablespoon mild curry powder
- 1 tablespoon ground cumin
- 1 tablespoon tumeric
- 1 tablespoon kosher salt
- ¼ teaspoon cayenne pepper
- 1 medium onion diced
- 4 cloves garlic minced
- 1 russet potato diced into ½ inch cubes (about 1.5 cups)
- 1 cup frozen peas
- vegetable oil spray
- 2 tablespoons fresh cilantro diced
Instructions
- Preheat oven to 425 degrees
- In a small bowl whisk together olive and sesame oils with spices, curry powder, cumin, turmeric, salt and cayenne pepper
- In a large bowl combine cauliflower, onion, garlic, potato, peas and then add the oil/spice blend folding everything together to evenly coat the vegetables
- Line a large rimmed baking sheet with aluminum foil, spray with vegetable oil and then spread out the coated vegetables in an even layer
- Bake for 20 minutes, stir and then bake for another 20 minutes
- Plate, sprinkle with chopped cilantro and serve
