Ingredients
- 1/3 cup pitted prunes
- 8 small green olives
- 3 tablespoons loosely packed oregano leaves
- 2 tablespoons capers
- 2 tablespoons olive oil
- 2 tablespoons red wine vinegar
- 3 cloves garlic
- Minced
- 2 bay leaves
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 4 to 5 pound whole chicken cut into pieces
- ¼ cup brown sugar
- ¼ cup white wine
Instructions
- Add prunes, olives, oregano, capers, oil, vinegar, garlic, bay leaves salt and pepper to a large zip-lock plastic bag. Seal and mix well. Add chicken and turn and massage to coat well. Chill overnight
- Preheat oven to 350 degrees
- Transfer chicken to a large Pyrex baking dish. Sprinkle with brown sugar and pour wine around the chicken.
- Bake uncovered for 30 minutes. Baste with juices and then return to oven for 15 minutes. Baste with juices again and return to oven for a final 15 minutes. Garnish with fresh oregano and serve
