BBQ Ribs Beans and Slaw
“I Don’t Cook” Memphis Menu
The beauty of this kind of supper club is you get to enjoy the best local food wherever you are from the comforts of your own home. Living in Memphis and planning an “I Don’t Cook But I Know Where to Buy” dinner, I pretty much need to have a BBQ menu. If you go anywhere in the world tell someone you are from Memphis, the first thing they say is “Elvis.” The second thing they say is “BBQ.” Memphis BBQ is a great way to feed an impromptu no-cook supper club party.
On my very first night in Memphis, I went to Corky’s BBQ and ordered ribs. The waitress asked me if I wanted my ribs “wet or dry.” I said, “Excuse me?” and she said, “Y’all a Yankee, you will like your ribs wet.” She was right. Memphians are partial to their ribs cooked dry, which means rubbed in a dry spice blend. Yankees like their ribs wet, or cooked with BBQ sauce.
