Ingredients
- 4 skin on chicken thighs
- ½ onion cut into 3/8 inch slices
- 3 carrots peeled and cut into 3/8 inch slices
- 2 celery stalks cut into 3/8 inch slices
- 10 cloves of garlic peeled
- 1 potato cut into 3/8 inch slices
- 10 pitted kalamata olives
- 2 tablespoons capers
- 4 pepperoncino peppers
- ½ cup white wine
- ½ cup chicken broth
- ½ cup all purpose flour
- 2 tablespoons Herbs de Provence
- 6 sprigs fresh thyme
- Kosher salt and freshly ground black pepper to taste
- 4 tablespoons olive oil
Instructions
- Dredge the chicken thighs in flour and then sauté on high heat for 5 minutes a side to create a good sear.
- Line the bottom of a good sized baking pan with carrots, celery, potato, onion, garlic, olives capers, peppers and then place the seared chicken on top
- Add the wine, stock, Herbs de Provence and thyme
- Bake four 1 hour in a 360 degree oven
- Serve with a good portion of the baking juices/sauce
