Ingredients
Chopped Salad
- • 1 medium-sized head romaine lettuce, chopped into ½-inch slices
- • ¼ cup red onion, sliced thin
- • ¼ pound Genoa salami, sliced thin then cut into 14-inch julienned slices
- • 1 cup low moisture mozzarella cheese, grated
- • 1 cup grape tomatoes, cut into halves
- • 1 cup Kalamata olives, cut into halves
- • 2 hard-boiled eggs, coarsely chopped
- • ½ cup hearts of palm, roughly chopped
Italian Dressing
- • 2 cloves garlic, finely chopped/mashed with ½ teaspoon kosher salt
- • ¼ cup red wine vinegar
- • 1 teaspoon Dijon mustard
- • ½ cup extra virgin olive oil
- • 1 teaspoon dried oregano
- • ½ teaspoon black pepper
Instructions
Chopped Salad
- In a large salad bowl, add the ingredients.
- Toss to blend.
- Add a ½ cup of Italian Dressing (see below) and toss lightly. Taste to assess if there is enough dressing. Add more as needed.
Italian Dressing
- In a medium bowl, add the mashed garlic, vinegar and mustard. Wisk to blend.
- Add the olive oil in a drizzle, whisking vigorously to emulsify.
- Whisk in the oregano and the pepper then set aside.
