Notes
This aioli works well as a sauce, a salad dressing or a dip for crudités. It falls in the carry of "You could put it on shoe leather and it would taste good".
Ingredients
- 1 green onion (White and green parts)
- 1 clove garlic
- 1 tablespoon capers
- 2 Pepperoncini peppers
- 1/8 cup red wine vinegar
- 1/4 cup olive oil
- 1/2 cup mayonnaise
- 1/2 cup Gorgonzola cheese
- Kosher Salt & Pepper
Instructions
- In the bowl of a food processor pulse together onion, garlic, capers and Pepperoncini peppers.
- Add blue cheese, pulse.
- Add olive oil and vinegar, pulse.
- Add mayonnaise, pulse.
- Serve

Try the gorgonzola aioli. Super easy. Super good. Super versatile. It ain’t Mom Mom’s vinaigrette but its pretty good

Bo – Good to hear from you. Try that Gorgonzola Aioli. You could put it on shoe leather and it would taste good. Did my bagels, donuts, frittatas and secret recipe brownies for the boys at Ridgeway. My bagel place changed the way they make the bagels and they ain’t the same, I even brought a toaster in, but they weren’t up to our standard. Only you and I would notice. To be honest, the brownies were the biggest hit. Hoping you and your family are healthy – PK
