Ingredients
- 1 cup almond flour
- 4 Tablespoons butter (softened)
- 1 teaspoon kosher salt (1/2 teaspoon for dough, 1/2 teaspoon for topping)
- 1 egg white
- 3/4 cup Parmesan cheese grated (1/2 cup for dough ¼ cup for topping)
- 1 tablespoon sesame seeds
Instructions
- Combine almond flour, butter, salt, egg white and ½ cup of parmesan in the bowl of a food processor. Pulse to combine.
- Place the dough ball between two large pieces of parchment paper and roll out until it is 1/8 of an inch thick.
- Remove the top piece of parchment paper and score the sheet of dough using a pizza cutter into the 1.5 inch by 1.5 inch squares
- Slide the parchment paper/dough sheet onto a baking sheet and bake in a preheated 350 degree oven for 15 minutes. Turn the oven off and close the door.
- Remove from the oven and then cut pieces with the pizza cutter following the score marks made earlier
- Return the crackers to the warm oven (previously turned off) and let the crackers cure for another 30 minutes
