Ingredients
- 8 ounces Elbow Macaroni
- 5 tablespoons olive oil
- 3 tablespoons red wine vinegar
- ¾ cup onion (finely diced)
- ¾ cup celery (finely diced)
- ¾ cup mayonnaise
- ¾ cup sour cream
- 4 eggs chopped
- Salt & Pepper to taste
Instructions
- Cook macaroni following package instructions to just el dente (firm to the tooth)
- Marinate the pasta with olive oil, vinegar, onion, celery, salt and pepper for 4 hours or over night
- Whisk together the mayonnaise and sour cream in a separate bowl
- Add the chopped egg to the marinated macaroni and then fold in the mayo/sour cream mixture
