Ingredients
- 2 pounds red potatoes (whole)
Marinade
- 1/4 cup white wine vinegar
- 3/4 cup olive oil
- Kosher salt and fresh ground pepper
Dressing
- 1/4 cup sour cream
- 3/4 cup mayonnaise
- 1 tablespoon lemon juice
Other
- 1/2 cup red onion diced
- 2 tablespoons fresh herbs diced (chives and Italian parsley)
- Kosher salt and fresh ground pepper
Instructions
- In a large pot boil potatoes until just fork tender. Drain potatoes and set aside to cool
- When potatoes are still warm, peel them by scraping off skins with a knife (You don't have to go crazy, just scrape off 90% of the skin)
- Dice into 1 inch slices that are about a 1/2 inch thick and place in a large bowl.
- Whisk together the marinade and then fold into the potatoes, providing a nice coating
- Sprinkle on the Kosher salt and freshly ground pepper
- Cover with plastic wrap and then place in refrigerator overnight.
- In a medium bowl whisk together the mayonnaise, sour cream and lemon juice to make the dressing
- Fold the dressing into the potatoes.
- Add the onion and mix in
- Sprinkle on herbs and serve
