Ingredients
- 8 cups crusty baguette Cust in one inch cubes
- 1 cup onion diced
- 1 cup celery diced
- 1 cup carrot diced
- 1 12 0z. Package of breakfast sausage
- 1 large apple diced
- 1 cup walnuts chopped
- 2 eggs (roughly scrambled)
- 2 cups chicken broth
- 1 stick butter
- 2 teaspoons poultry seasoning
- 1 teaspoon kosher salt
- 1 teaspoon black ground pepper
Instructions
- A day in advance slice the baguette into once inch slices and set out in the open air to stale. Working with stale bread adds texture to the stuffing
- Brown the sausage in a large sauté pan breaking up the sausage with a spatula into smaller pieces. Set aside.
- Add butter, celery, onion, carrots to pan and sauté under medium heat for 10 to 15 minutes until softened
- In a large mixing bowl, combine, baguette, carrots/onion/celery mixture, sausage, walnuts, apple, eggs and chicken broth. Stir to combine. Add poultry seasoning, salt and pepper. Fold to combine.
- Pour the mixture into a 9 by 13 inch Pyrex baking dish and the cover with aluminum foil.
- Bake at 350 degrees for 45 minutes removing the aluminum foil for the last 15 minutes.
