Ingredients
- Five boiled potatoes (Cooked, cooled sliced)
- 1/3 cup bottled pesto
- 10 - 12 eggs
- 5 - 8 slices cooked and chopped bacon
- 1 cup cheese (cheddar or anything mix you have)
- 3 Scallions if available
- 1/4 cup butter
- Salt & Pepper to taste
Instructions
- Melt 1/4 cup butter in oven ready frying pan
- Sauté sliced potatoes with pesto in pan
- Add scrambled eggs mixed with 1/2 cup cheese, chopped bacon and chopped scallions
- Put remaining cheese on top
- Gently mix eggs mixture until beginning to set
- Bake 350 for 25 minutes until puffed and golden and crispy on edges
