Ingredients
- 2 pounds of larger new potatoes cut into one inch wedges
- 1 large onion cut into a large dice
- 1 stick (1/2 cup) of unsalted butter
- Vegetable oil for frying
- Salt and pepper
Instructions
- In a large fryer pre-cook your potatoes in vegetable oil under moderate heat (250 degrees) for 15 minutes or until the potatoes are fork tender and just beginning to show color. Drain and set aside
- In a large frying pan melt the butter and add the onion. Sauté for a few minutes to slightly soften the onion. Add the precooked potatoes and stir together to coat potatoes with butter and onion.
- Roast the potatoes in a 350 degree oven for 30 minutes. I try to time this so that the potatoes are just about done as the guests arrive. The aroma of the potatoes and onion roasting is fantastic. Chances are the guests will not remember the meal but I guarantee that they will remember the aroma.
What is a large fryer? Are you referring to a deep fryer?
Yes I use a deep fryer, but all you need is a good sized pot with a couple of inches of oil
