Ingredients
- 2-3 cups roasted/grilled left over vegetables (could be mushrooms, asparagus, onions, peppers, brussel sprouts, beans)
- 1/4 cup butter
- 10 -12 eggs
- 5 to 8 slices bacon cooked and chopped
- 1 cup cheese (cheddar or anything mix you have)
- Salt & Pepper
Instructions
- Melt butter in frying pan and sauté vegetables
- Mix in scrambled eggs mixed with chopped cooked bacon and 1/2 cheese
- Gently mix eggs mixture until beginning to set
- Put remaining 1/2 cup cheese on top
- Bake 350 for 25 min or more until puffed and golden and crispy on edges
