Smoked Salmon, With Salmon Spread Crostini

Ingredients
- 1 baguette
- ¼ cup olive oil
- 8 ounces cream cheese (softened)
- 1 small shallot dices
- 2 cloves garlic diced
- 2 tablespoons prepared horseradish
- 2 tablespoons fresh dill plus several sprigs for decoration
- 4 ounces (113 grams) of smoked salmon. Half (2 ounces), for inclusion in spread and for topping. Cut all into 1 inch slices
- Kosher salt and black pepper to taste
Instructions
- Cut baguette into 3/8 inch-thick diagonal slices. Brush lightly with olive oil and then bake in a 350-degree oven of 10 minutes on each side. Sprinkle with Kosher salt after baking
- Sauté shallots and garlic for 6 minutes in a sauté pan on medium heat or until translucent
- In a food processor fitted with a metal blade add shallots, garlic and dill pulsing to get a good dice.
- Add softened cream cheese and horseradish then pulse to combine.
- Add smoked salmon and pulse minimally to combine. Set aside
- Spread a heaping tablespoon of Smoked Salmon Spread on each baguette slice. Top with a piece of smoked salmon
- Decorate with a sprig of fresh dill
