Ingredients
- 1 lb. ground turkey (or beef, or lamb, or pork, or chicken)
- 6 tablespoons olive oil
- 2 ears corn (kernels removed from the cob)
- 2 teaspoons kosher salt
- 1 teaspoon black pepper
- 1.5 teaspoons ground coriander
- 1.5 teaspoons ground cumin
- 2 cloves garlic (minced)
- 1/2 cup onion (minced)
- 1/2 cup celery (minced)
- 1 cup chicken stock
- 2 teaspoons corn starch
Instructions
- Sauté turkey with one tablespoon of olive oil, breaking the turkey up as it cooks. (About 5 minutes) Set aside.
- Sauté corn with one tablespoon of olive oil, stirring occasionally to get an even sauté. (About 3 minutes). Set aside
- Sauté onion and garlic in one tablespoon of olive oil. About 3 minutes.
- Add chicken stock and cook for 5 minutes reducing liquid by a third.
- Mix corn starch with 1/2 cup of water and combine with the chicken stock, Bring to a boil, add cumin, coriander, salt and pepper and continue to stir as it thickens,
- Add back the meat and corn stirring to combine.
